Use Vegetables That Are in Season
Peas, asparagus, zucchini, broad beans, eggplant, peppers, tomatoes, etc. The trick is to cook them all separately and then mix them all together at the end.

You can make it creamier by adding some ripe avocado. If you want to go vegan by leaving out the cheese, don’t forget to add two teaspoonfuls of nutritional yeast or brewer’s yeast, which have a similar flavor to cheese.
