Sweet Potato and Kale Salad
Serves 4 #STARFineFoods Ingredients: 1 bunch of Lacinato kale 2 medium sweet potatoes, cubed 1 3/4 cups sundried tomatoes 1/2 cup STAR green olives 1 cup pine nuts 1/4 cup chopped walnuts 1/4 cup chopped almonds ----- For the vinaigrette: 1/4 cup STAR Extra Virgin Olive Oil 2 tbsp STAR apple cider vinegar 1 tbsp lemon juice Salt and pepper, to taste Instructions:Bake the diced sweet potatoes for about 45 minutes at 375 ºF.
In a bowl, combine the kale, sundried tomatoes, sliced green olives, and chopped walnuts and almonds.
Toast the pine nuts in a pan, stirring constantly so they don’t burn. Add them to the salad. Then add the lukewarm sweet potato.
Prepare the vinaigrette by mixing the extra-virgin olive oil, apple cider vinegar and lemon juice. Add salt and pepper to taste, dress the salad and serve.
