The etymology of the word “vinegar” tells us a lot about it: it comes from the Latin terms vinum (wine) and acre (sour), and people have been making it for more than 7,000 years. Red wine vinegar is the result of the alcoholic fermentation of wine. Bacteria known as Acetobacter carry out a chemical process that transforms the alcohol into acetic acid, giving vinegar its sour taste. It can be made in many different ways; there are even people who are brave enough to make it at home!
Although originally it was only made from wine, today we can find vinegars made by fermenting apple cider, rice wine, or sherry, among other things.
