Steak Salad with Balsamic Dressing

Serves 4 #STARFineFoods Ingredients: 1 large thick steak 4 ounces of mixed baby greens 1 large avocado 1 spring onion ½ cup of gorgonzola cheese ===== For the vinaigrette 5 tablespoons STAR Extra Virgin Olive Oil 3 tablespoons STAR balsamic vinegar 1 clove of garlic 1 tablespoon chopped basil Salt and pepper Instructions:

Prepare the vinaigrette: in a bowl, mix the extra virgin olive oil, balsamic vinegar, minced garlic and chopped basil, along with some salt and pepper.

Cook the steak in a very hot pan with a drizzle of extra virgin olive oil, until it is medium rare.

Place the mixed greens in a salad bowl and add the diced avocado, the sliced spring onion, the crumbled gorgonzola cheese and the steak sliced into strips.

Pour the balsamic vinaigrette over the top, stir and serve while the meat is still warm.
