Quick Pickled Onions

10 minutes Serves 2 Cups Pickled onions are perfect on top of a grilled cheeseburger or steak, tossed into a summer salad, or served in a bowl to snack on. Note: Use the same recipe to pickle any other vegetables such as cauliflower, peppers, broccoli, radish, artichoke, garlic, etc. and flavor with other spices and herbs such as small dried chilis, allspice berries, rosemary, tarragon, dill, cinnamon sticks, fennel seeds, cardamom pods, raisins and more. #STARFineFoods Ingredients: o 1 medium red onion, about 5oz o 1 tsp salt o 1 cup STAR red wine vinegar o 1 cup water o 1 tbsp black peppercorns o 2 star anise o 4 sprigs thyme o 2 cloves garlic o ½ tsp chili pepper flakes Instructions:

Add peppercorns, star anise, thyme, garlic, chili pepper flakes to a mason or other glass jar. Slice onion and place in the jar over the spices.

In a small saucepan over medium heat, bring vinegar, water, sugar, and salt to a simmer. Stir until sugar and salt dissolve, then pour mixture over onions and spices.

Let cool to room temperature, then place lid on securely and refrigerate until ready to use, at least 2 hours. Onions will keep in the refrigerator for up to 1 month.
