Coconut Curry Salmon
Serves 4 #STARFineFoods Ingredients: 4 salmon fillets ½ onion 2 cloves of garlic 1 tablespoon red curry paste 1 can coconut milk A splash of STAR Extra Light Olive oil 1 tablespoon lime juice Salt and pepper Instructions:Brown the salmon in a pan with a few drops of Extra Light Olive Oil.Take it out of the pan and set it aside.
Add a little more oil and brown the onion and the sliced garlic. Add the red curry paste and cook for 5-7 minutes.
Pour in the coconut milk and continue cooking for a few minutes until it thickens. Add the salmon and lime juice. Season with salt and pepper and cook everything together for a few more minutes.
Serve with basmati rice.
