Pasta with Tofu
Serves 4 #STARFineFoods Ingredients: 12.7 oz penne 1 large onion 2 carrots 1 green pepper 1 red bell pepper 1 zucchini 7.05 oz tofu A splash of STAR Extra Virgin Olive Oil Salt and pepper 1 teaspoon ground cloves 1 teaspoon fresh dill 3.5 oz grated Parmesan cheese Instructions:Brown the chopped onion in a deep frying pan with plenty of extra-virgin olive oil. Add the sliced carrots and cook for another 2 to 3 minutes over medium heat, stirring often.
Add the peppers cut into thin strips and let them cook. Finally, add the sliced zucchini and cook all the vegetables together, stirring all the while. Add the tofu, well drained and dry, sliced into cubes. Season with salt and pepper and add the spices.
Cook the pasta according to the instructions. Drain and add to the pan with the vegetables. Add salt and pepper to taste.
Serve the pasta topped with the grated Parmesan cheese.
