Healthy cream of avocado soup
Serves 4 #STARFineFoods Ingredients: 4 ripe avocados 1 liter vegetable broth STAR Extra-virgin olive oil 1 lemon Toasted almonds Salt and pepper Instructions:Scoop out the flesh from the avocado and mash to a puree.
Warm up the vegetable broth and then take it off the heat. Let it cool before adding the lemon juice and avocado puree. Stir to make a smooth, creamy soup. Add salt and pepper to taste.
