Lentil Soup
Serves 4 #STARFineFoods Ingredients: 300 g lentils 1 onion 2 cloves of garlic 2 carrots 1 liter vegetable stock 30 ml STAR red wine vinegar 30 ml STAR extra virgin olive oil Salt and pepper Instructions:Heat the extra virgin olive oil in a saucepan. Add the julienned onion, chopped garlic and thinly sliced carrots and sauté for 5 minutes.
Add the lentils and stir for a few minutes to bind all the flavors together.
Pour in the vegetable stock and bring to a boil.
Reduce the heat and simmer for 40 to 60 minutes (depending on the variety of lentils you’re using), until the lentils soften.
Add the red wine vinegar and mix well. Season with salt and pepper to taste.
