Cream of Cauliflower Soup with Almond Milk

Cook the cauliflower florets in a pot with salted water for 10-12 minutes until tender. Drain and set aside.

Heat the olive oil in a pan and sauté the chopped onion and garlic. Add the cauliflower and cook for a few minutes.

Blend the cooked cauliflower, onion and garlic together with the warmed almond milk until smooth and creamy. Season with salt and pepper to taste.

Add your favorite toppings: a handful of chopped nuts, a splash of almond milk or a little grated cheese.
