Quick and easy baked salmon
Serves 2 serves #STARFineFoods Ingredients: 1 onion 2 medium potatoes 2 ripe tomatoes 3 cloves of garlic 2 salmon fillets, about 10½ oz each 1 Pinch Thyme 1 Pinch Rosemary Salt, to taste Pepper, to taste STAR extra virgin olive oil Instructions:Peel and julienne the onion. Peel and cut the potatoes into slices about ½ inch thick. Wash and slice the tomatoes, leaving the skin on.
Crush the cloves of garlic, skin and all, using a pestle and mortar.
Grease an oven sheet with extra virgin olive oil and arrange the chopped vegetables in the following layers: potatoes, tomatoes, garlic, and onion. Add salt and pepper to taste, add the herbs and drizzle some more extra virgin olive oil on top.
Cover the tray with aluminum foil and bake in the oven for about 30 minutes at 350 ºF.
Add the salmon fillets, turn up the temperature to 400 ºF and cook for about 10 more minutes.
