Preheat oven to 400 degrees. Toss broccoli and cherry tomatoes in STAR Extra Virgin Olive Oil. Sprinkle with salt, pepper and minced garlic. Place in oven and roast for 20-30 minutes, or until broccoli is fork tender. Turn frequently to ensure proper roasting.

While the vegetables are roasting, cook pasta according to package directions. Drain.

When vegetables have finished roasting, and pasta has been cooked and drained. Pour both into a large bowl. Sprinkle with ½ cup of Parmesan and gently toss to combine. Serve and sprinkle with remaining parmesan cheese. Drizzle with additional olive oil if desired.
