Light and healthy Easter cake
Serves 8 Here it is! A lighter, healthier way to celebrate Easter! This highly original creation will delight the young and not-so- young alike! #STARFineFoods Ingredients: 1 pie crust for the base 7 oz cream cheese 4 tbs of nut milk of preference 1 teaspoonful of vanilla extract 4 dates, pitted A selection of seasonal fruit to decorate: dried apricots, kiwi, pomegranate seeds, strawberries, mandarin oranges, cranberries, mango, pistachios, hazelnuts, etc. Instructions:Roll out the pastry and cut out the edges into an egg-like shape. Put the pastry onto a baking sheet and put in the oven per package directions. Once it has turned golden brown, take out of the oven and put aside to cool.
Using a food processor, blend the cream cheese, nut milk, vanilla and dates (to give the mixture some natural, healthy sweetness), until a smooth consistency has been reached. Spread a thin, even layer of the mixture onto the pastry and decorate with alternating lines of fruit. Enjoy!
