Summer salad to beat the heat

Serves 4 Original, sophisticated and packed with nutrients, this salad makes the perfect lunch to pack for work and a great starter when you have dinner guests. It never fails! #STARFineFoods Ingredients: 4½ oz mixed lettuce 2 oz walnuts Handful of black olives 4 radishes 3½ oz feta cheese ½ spring onion 2¾ US fl oz extra-virgin olive oil A little lime juice 1 soupspoonful of white wine vinegar Instructions:

Put the mixed lettuce, half the walnuts, the olives, the crumbled feta cheese and the sliced radishes and spring onion in a bowl.

To make the vinaigrette, crush the remaining walnuts and mix with the extra-virgin olive oil, lime juice and white wine vinegar.

Add salt if necessary and drizzle over the salad. Serve immediately.
