Grate the sweet potatoes (peeled or not) into a bowl. Chop the onion and add to the sweet potato.

Next add the rice flour, mozzarella and beaten eggs. Mix together and add salt and pepper. Spoon the mixture into portions of the desired size.

Heat two spoonfuls of extra-virgin olive oil in a frying pan. Fry the portions until they turn golden brown on both sides.

Serve the fritters hot with your favorite sauce on the side.
