Spaghetti all’assassina
Serves 4 #STARFineFoods Ingredients: 400 g spaghetti 4 cloves of garlic 2 chillies 100 g tomato sauce 2 L water 4 tablespoons tomato paste A splash of STAR extra virgin olive oil A pinch of salt A pinch of black pepper Instructions:In a wide, deep pan, sauté the finely chopped onion and garlic in a drizzle of extra virgin olive oil. Add the tomato sauce and cook for a few minutes, stirring constantly.
Add the spaghetti to the sauce and let it cook on both sides. Season with salt and pepper to taste.
In a separate bowl, mix the water with the tomato paste and add this mixture to the pan to finish cooking the spaghetti without an excess of water. Add salt to taste if necessary.
Remove from the heat when the spaghetti is fully cooked and has absorbed this strong, flavorful broth. Serve topped with grated parmesan.
