The Simplest Blinis
Serves 4 #STARFineFoods Ingredients: 250 g flour 5 g sugar 5 g active dry yeast 1 egg 300 ml warm whole milk 15 ml STAR extra virgin olive oil A pinch of salt Instructions:In a bowl, combine the flour, salt, sugar and yeast. In another bowl, beat the egg together with the milk and extra virgin olive oil. Add the wet ingredients to the dry and stir until the batter is well mixed.
Heat a non-stick frying pan with a little extra virgin olive oil. Spoon small portions of the batter into the pan (1 tablespoon per blini) and cook the blinis for 1 to 2 minutes on each side, or until golden brown.
Set them on a plate and let them cool slightly before adding the toppings.
Some ideas for toppings:
- Smoked salmon and cream cheese. Smoked salmon, cream cheese, fresh dill and a drizzle of extra virgin olive oil.
- Avocado and cherry tomatoes. Avocado slices, halved cherry tomatoes, salt, pepper and a splash of extra virgin olive oil.
- Hummus and black olives. Hummus, sliced black olives and chopped fresh parsley.
- Goat cheese and walnuts. Crumbled goat cheese, chopped walnuts, a drop of honey and a drizzle of extra virgin olive oil.
- Hazelnut spread and chopped nuts. The ideal dessert! With a splash of extra virgin olive oil and a little salt, of course.
