Pasta with Cottage Cheese
Serves 6 #STARFineFoods Ingredients: 500 g penne 250 g cherry tomatoes, sliced in half 4 chive leaves 2 tablespoons lemon juice 100 g chopped walnuts Salt and pepper 2 tablespoons STAR Extra Virgin Olive Oil 300 g cottage cheese A few leaves of fresh basil 100 g grated Parmesan cheese Instructions:Cook the penne following the instructions on the package. Set aside a cup of the cooking water.
Mix the tomatoes, chives, lemon juice, chopped walnuts, pepper and a pinch of salt in a large bowl. Pour in a tablespoon of STAR Extra Virgin Olive Oil and stir.
Add the hot pasta and the cottage cheese and stir again. Add in the pasta water little by little, until the mixture is no longer dry. Add salt to taste if necessary.
Garnish with some basil leaves and serve topped with Parmesan cheese.
