Healthy Chicken Tacos

Serves 4 #STARFineFoods Ingredients: 2 chicken breasts 1 lime 1 medium onion 1 medium carrot 1 zucchini 5.30 oz mushrooms 8 corn tortillas A splash of STAR Extra Virgin Olive Oil Salt and pepper Instructions:

Cut the chicken breasts into strips and marinate them in the lime juice for half an hour. Then, pan fry the chicken in a drizzle of extra virgin olive oil and set it aside.

Sauté the onion in a pan with some extra virgin olive oil until it begins to brown. Add the sliced carrot and cook everything for a few minutes. Then add the sliced zucchini and mushrooms, and cook them, stirring occasionally. Add salt and pepper to taste.

When the veggies are cooked al dente, add the chicken for a minute so the flavors mesh.

Heat the corn tortillas on a very hot skillet or a griddle for one minute. Now, assemble the tacos with the chicken and vegetables.
