Chocolate Chip Spelt Cookies

Mix the spelt flour with the ground almonds, the baking powder and the sugar.

Cut the butter into cubes and add it to the bowl (if it is too stiff, you can put it in the microwave for a few seconds). Add the extra virgin olive oil and the almond milk and begin mixing the dough with your hands. Mix in the chocolate chips and let the dough rest for 20 minutes.

Roll the dough into balls, flatten them into cookie shapes and bake them at 356ºF for 20 minutes. Transfer the cookies to a wire rack to cool.
