Heat a splash of
extra virgin olive oil in a saucepan and sauté the onion and garlic in it. When they begin to brown, add the green bell pepper. Cook for about 5 minutes.

Add the chicken and continue cooking until golden brown. Then add the rice and cook it together with the rest of the ingredients for a few minutes. Add salt and pepper to taste.

Pour in the water or vegetable broth and cook over high heat for 4-5 minutes. Lower the heat and cook for about 15 more minutes over low heat.
Let it rest, covered, for another 5 minutes.
