Ingredients

  • 13 oz spaghetti
  • 2 ripe avocados
  • 1 tablespoon fresh coriander
  • 3.2 oz walnuts
  • STAR Extra Virgin Olive Oil
  • 3.5 oz

Instructions

  • 1.
    Cook the spaghetti according to the instructions. Set in the fridge to cool.
  • 2.
    In a blender, blend together the avocados, cilantro, walnuts and the extra virgin olive oil (add oil to taste until the sauce has the desired thickness).
  • 3.
    Mix the spaghetti with the fresh cherry tomatoes, sliced in half. Add the sauce and stir well before serving.
