Boil the spaghetti in salted water according to package directions.

Pour a little STAR extra-virgin olive oil into a deep frying pan and sauté the sliced onion and garlic.

Add the chopped chorizo and stir well. Add salt, pepper and oregano, followed by the tomato passata (tomato paste), and cook well to combine all the flavors.

Strain the pasta and add it to the tomato sauce. Add salt to taste, and cook for a few minutes over low heat, stirring often.

Transfer into a baking dish, sprinkle the cheese on top and broil at 180ºC until the cheese has melted.
