Sweet and delicious, this peach cobbler is the perfect dessert!
Ingredients
5 ripe peaches
80 g sugar (white or brown)
1 tablespoon STAR balsamic vinegar of Modena
1 teaspoon vanilla
½ teaspoon cinnamon
A pinch of salt
For the crust
150 g flour
80 g cold butter
80 ml cow’s milk or plant-based milk
1 teaspoon baking powder
2 tablespoons sugar
A pinch of salt
Instructions

Preheat the oven to 180 ºC. Peel the peaches, slice them into wedges and set them in a baking dish.

Add the sugar, balsamic vinegar, vanilla, cinnamon and salt. Mix well and let it sit for 10 minutes so the fruit releases its juices.

Prepare the crust by mixing the flour, yeast, sugar, and salt. Add the diced butter and work it in with your fingers until the texture is sandy. Gradually add the milk and mix until smooth; try not to overwork it.

Add pieces of the dough to the top of the peaches, covering them unevenly to create the rustic effect typical of a cobbler.

Bake for 35-40 minutes until the surface is golden brown and the filling is slightly bubbly.

Let cool slightly and serve, ideally with vanilla ice cream or yogurt.
