In a bowl, combine the flour, sugar, salt, coconut or ground almonds with the butter (at room temperature and cut into cubes). Mix with your hands. Add the egg. Mix again, roll the dough into a ball and let it rest wrapped in plastic wrap for half an hour in a cool place. Before baking, you can top the cookies with sliced almonds.

Preheat the oven to 392 ºC.

Dust your countertop with some flour. Roll out the dough and use a cookie cutter to cut out individual cookies. Lay the cookies on a baking sheet greased with
extra-virgin olive oil and bake them for 10 minutes.
