Ingredients
For the caramel icing
45 g vegetable butter
30 ml honey
A pinch of salt
30 g peanut butter
30 ml walnut drink
For the apple mixture
3 large Fuji apples
1 teaspoon cinnamon
A pinch of nutmeg
A pinch of salt
20 ml apple cider vinegar
100 ml water
1 teaspoon STAR light tasting olive oil
For the cookies
100 g vegan butter at room temperature
150 g brown sugar
1 egg
300 g flour
A pinch of salt
¼ teaspoon baking soda
1 teaspoon ground cinnamon
Instructions

The caramel icing
Melt the vegan butter in a small saucepan. Add the honey and a pinch of salt and beat well. Add the peanut butter and continue beating until the mixture thickens. Remove from the heat and pour in the oat and walnut milk little by little, mixing until the batter is smooth and glossy. Set aside.

The apple mixture
Place the apples, peeled and diced, in a saucepan along with the olive oil, spices, salt, apple cider vinegar, and water. Cook over medium-low heat until the apples have softened and the liquid has thickened into a compote. Let cool.

The cookies
Beat the vegan butter with the brown sugar until it forms a creamy mixture. Add the egg and then the apple mixture (about 150 g). Mix well.
In a separate bowl, sift together the flour, salt, baking soda, and cinnamon. Gradually add the butter and sugar mixture and combine to form a dough.
Preheat the oven to 180 °C. Roll the dough into balls and set them on a baking sheet lined with parchment. Bake for 12-15 minutes and then cool the cookies on a wire rack.

Spread the caramel icing on top of each cookie and sprinkle with a little cinnamon for a finishing touch.
