Finely chop the onion. Remove the seeds and dice both tomatoes. Chop roughly a teaspoon of cilantro and a teaspoon of jalapeños very finely, you can add more later, if needed.

Peel the avocados, place the pulp in a bowl. Add the chopped onions, some lime or lemon juice, the chopped cilantro and a pinch of salt and pepper.

Mix the ingredients together using a fork.

Add 1 tbsp. STAR Extra Virgin Olive Oil and continue to mix together.

Fold in the chopped tomatoes and minced jalapeños.

Mix thoroughly and add salt, more minced jalapeños, or cilantro to taste.

To finish, add a hint of STAR Olive Oil Infused with Lemon Peel.
