Ingredients
500 g rehydrated salt cod, in pieces
2 eggs
20 ml whole milk
1 clove of garlic, grated
1 teaspoon paprika
100 g flour
50 g chickpea flour (optional, for a crunchier texture)
Salt and pepper
A splash of STAR Sunflower blend cooking oil
Lemon wedges for serving
Instructions

Dry the cod well using paper towels. In a bowl, beat the eggs with the milk and add the grated garlic, paprika, salt, and pepper.

In a separate bowl, mix the regular flour with the chickpea flour. Dip each piece of cod in the liquid mixture and then dredge in the flour. Make sure the pieces are fully coated.

Heat plenty of STAR Sunflower blend cooking oil in a frying pan over medium-high heat. Once the oil is hot, fry the cod in batches, turning once, until golden brown and crispy. Take it out and let it drain on a layer of paper towels.
