Ingredients
250 g fresh salmon (suitable for eating raw)
1 tablespoon STAR extra virgin olive oil
1 teaspoon soy sauce
½ teaspoon Dijon mustard
A splash of lemon juice
Salt and pepper
1 ripe avocado
60 g mixed nuts
Fresh chives to garnish
Instructions

Place the salmon in a bowl and add the olive oil, soy sauce, Dijon mustard and lemon juice. Season with salt and pepper to taste. Let it rest in the refrigerator for 20 minutes so that the flavors can meld together.

In another bowl, season the diced avocado with a pinch of salt and pepper and a few drops of lemon juice to keep it from turning brown.

Assemble the tartare using a ring mold: first add a layer of avocado, press it down lightly, and then top it with a layer of salmon. Carefully remove the mold and garnish the tartare with the nuts and the chopped chives.
