In a bowl, mix the breadcrumbs with the egg, crab meat, chives, mustard and mayonnaise. Season with salt and pepper. Divide the mixture into patties.

Set patties in a container or tray and cover them with plastic wrap. Allow to refrigerate for 1 hour. This is really important to allow the crab cakes to set.

Preheat a large, non-stick pan and coat with
STAR Light Tasting olive oil. When the oil is hot, place the patties in the pan and cook for about 3 to 5 minutes on each side, or until golden brown. Serve with tartar sauce.
