Salt Cod Salad with Vinaigrette

A simple and tasty salad made with the most delicious vinaigrette.
Ingredients
250 g rehydrated salt cod
1 crisp apple
A handful of raisins
1 red onion
A handful of sprouts or arugula
50 ml STAR extra virgin olive oil
15 ml STAR balsamic vinegar of Modena
1 teaspoon honey
Salt and pepper to taste
60 g of sliced almonds or walnuts
Instructions
1.
Shred the cod and, if necessary, rinse it in water to soften it. Drain it well.

In a bowl, combine the diced apple, raisins, and thinly sliced onion. Add the sprouts and the cod.

Prepare the vinaigrette by mixing the
extra virgin olive oil
,
balsamic vinegar
, honey, salt and pepper. Beat until emulsified.
4.
Pour the vinaigrette over the salad and mix gently. Sprinkle the sliced almonds or walnuts on top for more texture: this is optional, but it makes a big difference. Serve immediately.
