Salt and freshly ground black pepper to taste. You can also add crushed nuts. Toasted pine nuts are a great choice.
Instructions

In a jar with a lid or in a bowl, combine the balsamic vinegar of Modena with the mustard, dill, and, for a little boost, the honey or maple syrup. Mix until everything is well combined.

Add the extra virgin olive oil little by little, whisking vigorously (or shaking if using a jar), until the mixture emulsifies and forms a vinaigrette.
3.
Season with salt and pepper to taste and spread generously over vegetables or salads.
