Perfect cookies for breakfast or a snack. You won’t be able to stop eating them!
Ingredients
2 very ripe bananas
2 tablespoons maple syrup or honey
3 tablespoons nut butter (peanut or almond)
50 ml nut drink
50 g oat flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
A pinch of salt
100 g rolled oats
2 tablespoons chia seeds
50 g chocolate chips (optional)
A drizzle of STAR extra virgin olive oil
Instructions

In a large bowl, mash the bananas and mix them with the maple syrup or honey, the oil, the nut butter, and the nut drink to form a smooth batter.

Add the oat flour, cinnamon, baking soda, and salt. Mix until fully combined.

Add the rolled oats, chia seeds, and chocolate chips. Let the dough rest for a few minutes to let the oats absorb some of the moisture.

Shape the cookies using three tablespoons of dough for each one and set them on a cookie sheet, leaving about 5 cm between them. Top with extra chocolate chips if you like.

Bake the cookies at 180 °C for 12 to 15 minutes. Take them out of the oven and let them cool for a few minutes on the sheet before transferring them to a wire rack to cool completely.
