Vegetarian lentil salad

Serves 4 #STARFineFoods Ingredients: 11 oz cooked lentils ½ red pepper 1 green pepper ½ red onion 1 cucumber 2 extra-ripe tomatoes 1 carrot --- For the vinaigrette: 2.7 oz STAR extra-virgin olive oil 0.8 oz balsamic vinegar 1 tbsp lemon juice A pinch of mustard A pinch of pepper Instructions:

Put the lentils in a bowl. If they are pre-cooked, rinse them in plenty of cold water and let them drain fully first. 

Chop the peppers, onion, tomatoes and carrots into small cubes and add them to the lentils. Stir well to mix all the ingredients together. 

To make the vinaigrette, mix the STAR extra-virgin olive oil with the balsamic vinegar, lemon juice and spices. Pour it over the lentil salad and stir well. Add salt and mix all the ingredients together.
