Vegetable burritos
Serves 2 #STARFineFoods Ingredients: 2 corn tortillas 1 onion 3.5 oz red pepper 3.5 oz green pepper 1 clove of garlic A pinch of chili powder (depending on how spicy you like it) 2 tomatoes 9 oz corn 2 tbsp STAR extra-virgin olive oil 2 tsp green chili sauce (optional) Instructions:Chop the onion into small cubes and add to a frying pan with the extra-virgin olive oil. Sauté over medium heat, and when it starts to brown, add the chopped peppers and corn.
Once all the vegetables are golden brown, add the garlic, chili powder and grated tomatoes
Add salt and pepper and cook for 10 minutes over medium heat.
Transfer the vegetables into a bowl and set aside.
Wipe out the frying pan with a paper towel so that you can begin to assemble the tortillas
Add a tortilla to the pan and let it warm for a minute. Then add the filling and fold up the burrito tightly.
Cook the burrito until both sides are nicely toasted. Top with the green chili sauce.
