Vegan Salad

Slice the zucchini into thin strips, like spaghetti, using a knife or a mandoline.

Add the diced tomato, the olives (whole or sliced, as you prefer), the julienned onion, the corn and the sliced radishes. Add a few basil leaves.

To prepare the vinaigrette, mix the extra-virgin olive oil, the vinegar, the oregano and the tarragon.

Pour the vinaigrette over the salad, season with salt and pepper and stir well to bind the flavors together.
