Turkey Roulade

Serves 4 #STARFineFoods Ingredients: 1 onion 8 ounces bacon 1 cup mixed dried fruit 1 cup shelled pistachios 1 cup shelled walnuts 1 cup shelled almonds A splash of STAR Extra Virgin Olive Oil 1 boneless turkey breast 2 tablespoons white wine Salt and pepper Instructions:

Brown the onion in a pan with a splash of extra virgin olive oil. Add the sliced bacon. Cook it briefly, then add the nuts and dried fruit. Add salt and pepper to taste.

Flatten the turkey breast (buy it butterflied so you won’t need to slice it) and top it with the mixture of nuts, dried fruit and bacon for the filling. Roll it up carefully and tie it with a thin string to keep it from unrolling.

Brown the turkey breast in a pan with a splash of very hot extra virgin olive oil.

Set it in a baking pan, pour the white wine over it and bake it for 45-55 minutes at 356 ºF until completely cooked and golden brown.
