Sweet Pea-Potato Puree

Ingredients
2 1/2 cups frozen sweet baby peas, cooked and pureed
1 cup hot, mashed potatoes (*see recipe below)
4 Tbsp. grated Parmesan cheese
1-2 Tbsp.
STAR Balsamic Vinegar
(to taste)
2 tsp.
STAR Original Olive Oil
Instructions
1.
Boil 2 peeled medium potatoes until soft. Mash together with 3 Tbsp. chicken broth, 3 tsp. milk and 2 tsp. olive oil.
2.
Blend together pureed peas, mashed potatoes and Parmesan cheese. Drizzle Balsamic vinegar on top before serving.
