Summer Tuna Salad
Serves 4 #STARFineFoods Ingredients: ½ cup Sliced Pimiento Stuffed Manzanilla Olives 2 (6.5 oz.) jars Marinated Artichokes 1 (12 oz.) can chunk white tuna in water, drained ½ cup chopped red onion 2 stalks celery, thinly sliced 2 Tbsp. STAR Capers, drained Juice of 1 small lemon 2 large tomatoes cut in wedges 4 cups salad greens Instructions:In bowl, combine olives, undrained artichokes, tuna, onion, celery, capers and lemon juice.
Toss lightly to mix. (May be prepared several hours ahead and refrigerated.)
Arrange tomato wedges over greens on four salad plates. Top with artichoke mixture.
