Salmon tartare

Serves 4 #STARFineFoods Ingredients: 14 oz salmon 1/2 onion A handful of capers Fresh chives Grated lemon zest A dash of lemon juice STAR Extra Virgin olive oil Modena Balsamic Vinegar A dash of soy sauce 1 tbsp of wholegrain mustard A pinch of wasabi Egg yolk Sesame seeds Chives Instructions:

Chop the salmon with a knife.

Chop the onion and capers and mix them with the salmon.

Add the soy sauce, lemon drops, mustard, wasabi paste, a dash of vinegar and a dash of oil. Let it macerate, well covered, during one hour.

In a plate put a good portion of salmon tartar, an egg yolk on top and finish with a pinch of sesame seeds.
