Quiche with Spinach, Raisins and Pine Nuts
Serves 8 Welcome any morning or early afternoon with this delicious quiche. It’s the perfect light meal! #STARFineFoods Ingredients: 1 sheet short crust pastry 1/2 cup raisins 3 cups spinach 16 oz light cream 2 eggs Grated Parmesan cheese 1 round of Brie 1/4 cup pine nuts salt and pepper, to taste butter Instructions:Soak the raisins in water for half an hour. In the meantime, boil the spinach in a pan with salted water for 5 minutes. Strain and set aside.
Beat the eggs and mix together with the light cream and Parmesan cheese. Season to taste.
Grease the mold with butter and cover completely with the short crust pastry. Preheat the oven at 350 ºF and then bake the pastry for 15 minutes. Leave the oven on, but take out the pastry, when it has turned golden brown.
Arrange the spinach, slices of Brie, raisins and pine nuts on the pastry. Pour the mixture of cream, eggs and Parmesan on top.
Bake the quiche in the oven until it sets and starts to turn golden brown.
