Prawn and Avocado Salad

Ingredients
150 g cooked prawns
1 very ripe avocado
½ green apple
½ ripe mango
6 radishes
A few leaves of arugula
For the vinaigrette:
80 ml STAR extra virgin olive oil
30 ml STAR apple cider vinegar
2 teaspoons Dijon mustard
1 tablespoon lime juice
Salt and pepper to taste
Instructions
1.
Cut the avocado and apple into strips, cube the mango, and slice the radishes. Place everything in a salad bowl.
2.
Add the arugula and the shrimp.
3.
For the vinaigrette, mix all the ingredients together with the
STAR extra virgin olive oil
and the
STAR apple cider vinegar
. Pour it over the salad and serve very cold.
