Potato salad

Serves #STARFineFoods Ingredients: 35 oz of white potatoes, medium size 1 onion 1 red bell pepper 1 green bell pepper 2 tomatoes 1 glass of STAR extra virgin olive oil 4 tablespoons of balsamic vinegar of Modena 1 can of pitted green or black olives Parsley Salt Instructions:

Cook the potatoes in a pot with water and salt. When the potatoes are cooked, drain them and let them warm up. Then peel them and cut them into medium-sized irregularly shaped pieces and place them in a large bowl.

In a bowl, chop the onion and parsley, and add the oil and vinegar. If we want, we can add a pinch of salt to the mixture. Stir everything well and cover the potatoes.

We cut the tomatoes and chop the peppers -green and red-, we also add the olives (and the chopped almonds) and we add everything to the bowl. With this, our potato and vegetable salad is ready.
