Pecan pie

Serves Makes 1 pie #STARFineFoods Ingredients: Ingredients for the crust: 1 cup almonds 1 cup buckwheat flour 4 tablespoons honey 2 oz agreena 2 teaspoons cinnamon 6 Medjool dates --- Ingredients for the filling: 1 cup pecans ¼ cup water 6 oz peanut butter 12 Medjool dates 4 tablespoons of pure maple syrup or honey --- Ingredients for the topping: 2 cup pecans 2 tablespoons pure maple syrup or honey 1 teaspoon cinnamon Instructions:

Preheat the oven to 350F. 

For the decoration: spread the pecans in a baking dish, pour on the maple syrup or honey, add the cinnamon and stir. Bake for 10 minutes at 350 F until the nuts are golden brown and crunchy. Set aside. 

To prepare the crust, grind the almonds, add the buckwheat flour, the cinnamon, the honey, the seedless dates and the agreena. Combine to make a paste with a uniform, spongy texture. Grease the bottom of a cake pan with agreena and add the mixture. Press it down with the back of a spoon until it forms a compact layer. Bake for 15 minutes until it is golden brown and crisp. 

Meanwhile, prepare the filling. Grind the pecans for one minute. Add the peanut butter and mix again. Once they are well blended, add the maple syrup or honey and the seedless dates. Grind again, adding the water gradually until everything is mixed well. Chill in the refrigerator before using. 

When the crust is done, take it out of the oven let and it cool for a few minutes. Spread the filling on top of the crust and top with the caramelized pecans. Chill in the refrigerator for at least an hour to set before serving.
