Panko-crusted salmon

Serves 4 #STARFineFoods Ingredients: 4 salmon fillets (about 150 g each) 1 clove of garlic 100 g panko (Japanese breadcrumbs) 1 tablespoon fresh parsley 2 tablespoons STAR Sunflower Blend Cooking Oil Salt and pepper Instructions:

Preheat the oven to 200 °C.

In a skillet over medium heat, heat the STAR Sunflower Blend Cooking Oil. Add the minced garlic and sauté for one minute.

Add the panko and toast until golden brown, stirring constantly. Take the pan off the heat and mix in the chopped parsley. Set aside.

Place the salmon fillets on a baking sheet, greased with a little STAR Sunflower Blend Cooking Oil. Season with salt and pepper to taste. Lightly brush each fillet with 1 tablespoon oil.

Spread the panko mixture over the salmon fillets, pressing lightly to make sure it sticks.

Bake for 12 to 15 minutes or until the panko crust is crispy and golden brown.
