Line a baking pan with parchment paper and set aside.

In a large nonstick skillet, combine honey, olive oil, and water; set over medium high heat and stir until the mixture thins out.

Stir in the almonds; mix until thoroughly and evenly coated.

Sprinkle with salt, if using.

Transfer the almonds to previously prepared pan in one single layer. Bake for around 12 to 15 minutes, shaking the almonds every few minutes to prevent burning.

Cool to room temperature.
