Mix the walnut milk with the egg, flour, baking powder and salt. Beat everything together to form a light batter.

Pour a teaspoon of extra virgin olive oil into a pan, add a little of the batter to form a thin pancake. Cook it through, flipping halfway, and repeat until you’ve used all the batter.

Serve the pancakes with your favorite toppings: a teaspoon of honey and a handful of nuts, blueberries, for example. Garnish with a fresh mint leaf if you like.
