A Green Goddess Salad for Saint Patrick’s Day

Ingredients
1 head of cabbage.
1 cucumber.
1.76 oz spring onions
1 small head of iceberg lettuce.

For the vinaigrette:
2 cloves of garlic, peeled
1 small shallot
2 tablespoons STAR rice vinegar
Chives to taste
Juice from two lemons
¼ cup STAR Extra Virgin Olive Oil
¼ cup walnuts
1 cup spinach leaves
1 cup basil leaves
A pinch of salt
1/3 cup nutritional yeast
Instructions

In a salad bowl, combine the cabbage, cucumber, spring onions and iceberg lettuce all cut into small pieces.

For the vinaigrette, put all the ingredients into a blender and blend them together.
3.
Add the dressing to the salad, mix well and serve chilled.
