Combine the chopped garlic, Parmesan, breadcrumbs, oregano, salt and pepper in a wide dish and mix well.

Beat the eggs in a bowl and slice the chicken breast into thin strips.

Dunk the chicken breasts in the egg and then coat them in the breadcrumb mixture. Fry them in the oil at about 350ºF for approximately three minutes per side. Clear any crumbs out of the oil before adding each new batch of breaded chicken strips.
