Christmas Cupcakes

Make homemade buttermilk by mixing whole milk with a tablespoon of lemon juice and let it sit for 10 minutes at room temperature.

Beat the eggs well. Add the sugar and oil.

Mix the flour with the baking powder and salt to the homemade buttermilk and add the eggs. Beat until the ingredients are just combined.

Bake the batter in individual muffin cups at 311 ºF for half an hour. It is important to fill the cups only 2/3 full, as the batter will rise.

To make the frosting, beat the butter together with the cream cheese and sugar. Add the crushed strawberries. Fold in the whipped cream. Transfer the mixture into a pastry bag and frost the cupcakes once they are completely cooled. Decorate with berries to your liking.
